Sheet pan pancakes - say whatttt?


Hi Reader,

I was 37 years old when I learned about sheet pan pancakes, and how magical they are.

No joke - they helped get me through solo parenting, especially the sprinkled mix!

They were an easy breakfast option (that took 15 minutes to make ahead of time, mostly just in the oven while I could do other stuff, like make lunches).

And speaking of lunches, I used them for lunch, too! Not the same day I served them for breakfast - don't worry. But they are an easy addition to kids lunch boxes.

And they are already high in protein. But we like to add greek yogurt to add more protein, and serve with fruit. So, they really are a balanced option for kids and adults alike!
